Tags are being punched and freezers are filling up. Now you must decide how you are going to cook at that delicious game meat hat you have harvested out on your hunt. To help you decide on what to make this season, we have teamed up with Aubree Dovolis to show you a recipe that will quickly become a house favorite. We were fortunate enough to join Aubree in the kitchen as she showed us her favorite way to cook backstraps, and I can attest, they were delicious! Join along to find a new way to prep one of the best cuts of meat off any big game animal you harvested this fall.
Aubree’s Meal of Choice: Elk Backstraps with a Sweet Bourbon Glaze
Sides: Red Skin Garlic Mash Potatoes w/ Parmesan cheese and Oven Roasted Asparagus
Prep Time: 20 Min
Cook Time: 30 Min
Feeds: 2-3 adults
Ingredients:
Elk Steaks (or any wild game steaks)
® 16 oz of Backstrap Steaks (2 steaks) or Roast cut into 1” steaks
® 2 TBSP of Butter
Bourbon Sauce
® 1/2 Beef Broth
® 3 TBSP Bourbon
® 1 tsp Melted butter
® 1 TBSP Worcestershire sauce
® 1 tsp Brown Sugar
® 1 1/2 Tsp Granulated garlic
® 1 tsp Granulated onion
® 1 tsp Paprika
® 1 tsp Salt & pepper
Red Skin Mash Potatoes
® 6-8 potatoes (if you love leftovers, I recommend adding a few more potatoes)
® 1 & 1/2 TBSP Garlic (chopped or jarred)
® Salt & Pepper to taste
® 1/2 cup Shredded Parmesan
Oven Roasted Asparagus
® 1 bundle of Asparagus
® 1-2 TBSP of Olive Oil
® Salt & Pepper to taste
How to Cook:
® Heat medium cast iron skillet.
® Drop two squares of butter and melt until bubbles start to appear around sides.
® Place the steak in black skillet, cook each side for 5-6mins.
o Keep in skillet if you prefer a longer cook on steak
® Pull steak and place within foil (tightly) to finish cooking process for 10-15mins for a medium rare temp.
Burbon Sauce (Build Sauce while steak cooks in foil)
® In a saucepan, combine all first 4 ingredients, bring to a simmer.
® Mix in remainder of ingredients and let all simmer together for 5mins. Stirring often, keep warm and ready to serve.
® Can be placed on steak or as a side dipping sauce
Red Skin Mash Potatoes
® Wash, but do not peel, if you love the skin
® Place potatoes in large pan with water and salt, bring to a boil. Fork the potatoes until soft.
® Once soft, remove from water and add back into large pan and mash util slightly lumpy.
® Place freshly chopped garlic, salt, pepper and butter into pan (add milk if you prefer a fluffy mash potato dish). Stir until mixed thoroughly and serve.
Oven Roasted Asparagus
® Preheat oven to 375
® Massage Asparagus with oil, salt, and pepper.
® Lay across pan medium cooking sheet
® Cook 15-20 minutes or until Asparagus start to brown slightly
This is a simple and delicious way to cook up backstraps of any kind. It goes great with a glass of bourbon or even a nice bottle of your favorite red wine. No matter the occasion, you won’t be disappointed with this meal.
